Ingredients

Olive oil spray, 1 spray(s)
Oat bran, 1 cup(s)
Self-raising flour, white, 1 cup(s)
Baking soda, 1 teaspoon(s)
Mixed spice (cinnamon, nutmeg and cloves), 1 teaspoon(s)
Brown sugar, 50 g
Banana, 2 medium (180g with skin), mashed or sliced
Frozen mixed berries, 0.5 cup(s), thawed
Skim milk, 300 ml
Olive oil, 50 ml
Eggs, raw, 2 50g egg(s), free range if possible

Cooking instructions
  1. Pre heat oven to 180C.
  2. Spray a muffin pan (12 cake) with cooking spray and line with muffin cases.
  3. In a bowl, mix together the oat bran, flour, bicarbonate of soda, cinnamon and sugar.
  4. In a separate bowl, beat together the fruit, skim milk, oil and eggs until combined, then pour into the dry ingredients; stir to mix.
  5. Fill each muffin case with the mixture and bake for 20 minutes or until just firm to the touch. Allow to cool for 5 minutes before removing from tray.
