Take a trip to Southeast Asia at dinner time and enjoy the exotic flavours of Thailand in this healthy and indulgent noodle dish.
Ingredients
Hor fun/kway teow noodles (plain flat rice noodles), fresh, 500 g
Peanut oil, 1 teaspoon(s)
Beef rump steak, lean, raw, 500 g, thinly sliced
Sweet soy sauce (ketjap manis), 6 teaspoon(s)
Soy sauce, salt reduced, 5 teaspoon(s)
Fish sauce, 4 teaspoon(s)
Chinese broccoli (kai lan), 500 g, cut into 5cm lengths
Carrot, 1 medium carrot(s)
White pepper, ground, 0.25 teaspoon(s)
Cooking instructions
Cut the noodles into 2cm strips and separate them gently.
In a wok, heat the oil and cook the beef until brown - the thin strips will cook quickly. Remove the beef and set aside.
Reduce the heat to medium and add the noodles. Cook for 2 minutes.
Add the sauces – kecap manis, soy and fish sauces – then the broccoli, carrot and white pepper. Mix through and cook for 2 minutes.
Put the beef back in the wok and cook until the vegetables and noodles have softened.
