Scrambled eggs with smoked salmon

Salmon is a valuable source of essential fatty acids. This delicious breakfast takes just minutes to prepare.
Ingredients

Olive oil spray, 1 spray(s)
Onion, any type, 1 medium, finely diced
Eggs, raw, 4 50g egg(s)
Egg white, raw, 8 egg white(s)
Smoked salmon, sliced, 200 g, 8 slices, cut into 1 cm strips
Chives, 2 tablespoon(s), chopped
Sourdough, 4 small slice(s)

Cooking instructions

Heat a large frying pan over a low–medium heat and spray lightly with oil. Add the onion and cook gently until soft.

 
Beat the eggs and egg whites together and pour into the pan. Stir continuously for 3–5 minutes until cooked.
 
Remove from heat and combine with the salmon and chives. Serve immediately on unbuttered slices of toasted sourdough.
