Fennel and orange salad

Fennel has a lovely aniseed flavour and is a good palate cleanser. This salad goes well with fish, chicken or pork dishes.
Ingredients

Fennel, 100 g, 2 medium fennel bulbs, trimmed and finely sliced lengthwise
Orange, any type, 2 orange(s) (approx 200g with skin), peeled and cut into segments
Red onion, 0.5 small(s), finely sliced
Parsley, 30 g, 1/4 cup
Chicory, 500 g, 1 lettuce shredded
Lemon juice, 200 g, shredded
Garlic, 1 clove(s), crushed
Olive oil, 100 g, 1/2 cup
Linseed, 0.25 cup(s)

Cooking instructions
Place the fennel in a bowl of iced water for 5 minutes (this will make it crisper and sweeter).
 
To make the dressing place the lemon juice, garlic, olive oil, and flaxseed oil in an airtight jar and shake until combined.
 
Drain the fennel and combine all salad ingredients. Toss the dressing through until well coated.
