Tuna and asparagus salad

You can assemble this salad so quickly – it’s perfect to take to work.
Ingredients

Tuna, canned in water, drained, 400 g, 1 x 425 g can
Asparagus, 150 g, 2 bunches , sliced into 7 cm lengths
Sweetcorn, canned , drained, 0.5 cup(s)
Red capsicum, 0.5 capsicum(s), finely sliced
Spring onion, 4 medium onion(s), finely sliced
Lettuce, any type, 50 g, mixed lettuce leaves
Coriander, 0.5 cup(s) loosely packed
Dijon mustard, 1 tablespoon(s)
Wholegrain mustard, 1.5 teaspoon(s)
Natural yoghurt, low fat, 1 tablespoon(s)
White wine vinegar, 15 ml, 1 1/2 teaspoons
Lemon juice, 100 g, juice of 1 lemon

Cooking instructions
Drain the tuna. Steam the asparagus for 3–5 minutes until tender then allow to cool. To make the dressing place the Dijon mustard, seeded mustard, yoghurt, white wine vinegar and lemon juice in an airtight jar and shake until combined. Combine all salad ingredients and drizzle with dressing.
