Strong and sweet flavours make this salad high on taste and low on calories. Chilli, coriander, mint, lime, soy and salad leaves create a delicious bed for the sliced grilled beef.
Ingredients

Beef fillet, lean, raw, 300 g, or rump or sirloin
Olive oil, 1 teaspoon(s)
Black pepper, ground, 1 pinch(s)
Lettuce, any type, 2 cup(s)
Red onion, 0.5 small(s), finely sliced
Red chilli, 2 chili(s), seeds removed and shredded (go for 2 long chillis or 1 small)
Cucumber, 0.5 cucumber(s), sliced on the diagonal
Coriander, 0.5 cup(s)
Fresh mint, 0.5 cup(s)
Lime juice, 1 tablespoon(s)
Fish sauce, 2 teaspoon(s)
Soy sauce, light, 2 teaspoon(s)
Raw sugar, 1 teaspoon(s), or palm or brown sugar
Peanut oil, 1 teaspoon(s)

Cooking instructions

Heat a non-stick frypan, grill or barbecue to hot. Brush the beef with oil, sprinkle with pepper and grill for around 3–4 minutes each side or until cooked to your liking (medium rare is best for this salad). Set aside to rest for 3–5 minutes, then slice thinly.

Place the salad leaves, onion, chilli, cucumber, coriander and mint leaves in a large bowl. Mix together the lime juice, fish sauce, soy sauce, sugar and peanut oil in a separate bowl. Add beef to the salad, drizzle with dressing and toss gently to combine. Serve immediately.
