It’s time to dust off the barbecue and enjoy this satisfying treat which is full of flavour and has the goodness of Mediterranean-type vegies.
Ingredients
Olive oil spray, 1 spray(s)
Brannans Butchery Beef Mince, Extra Lean, 200 g
Zucchini, 1 small, sliced
Tomato, 1 medium, cut into thick slices
Red onion, 2 small(s), thick slices
Red capsicum, 1 capsicum(s), sliced into lengths
Table salt, 1 shake(s)
Black pepper, ground, 1 pinch(s)
Wholemeal bread roll, 2 roll(s)
Tomato relish, 50 g
Baby spinach, 0.5 cup(s), chopped
Cooking instructions
Lightly coat a non-stick frypan, grill or barbecue with olive oil. Heat to medium.
Divide the beef into 2 portions and flatten into round patties about 1 cm thick. Place the beef patties, zucchini, tomato, onion and capsicum on the grill. Sprinkle with a pinch of sea salt and pepper and cook for around 2–3 minutes each side, until the beef patties are cooked through and the vegetables are char-grilled.
Cut the bread rolls in half, spoon on the relish and top with baby spinach, beef and vegetables.
Note: This burger is a mouthful and best enjoyed with a knife and fork!
